I love making rice! I'm not a fan of Chinese food because I find most of the time it's very greasy. However, I had a craving for it and recently made my own fried rice and LOVED it! It was not greasy at all, full of veggies and yummy teriyaki flavors. Ingredients:
Prepare your rice the night before or earlier the day of and refrigerate. Scramble your eggs and set aside. In a hot skillet with oil sauté your onions and carrots until fork tender. Salt and pepper to taste. Then add your chopped garlic and sauté another few minutes. Now add the frozen sweet baby pees and just warm through. Set aside. In the same skillet with some heated oil add your rice and soy sauce. Mix to to combine then flatten out and let it cook on medium heat letting the bottom to crisp up. This take about 5 minutes or so. Keep checking the bottom. You want crispy not burnt. Once the rice has caramelized and crisped up add in your veggies, scrambled eggs, sesame seeds and sesame oil (optional) mix well to combine. Taste to make sure you have the right amount of soy and add green onion to finish.
Serve it up!!
