My Three Bean Salad is a perfect vegetarian or side dish. Today I had cannelloni beans, garbanzo (chickpea) beans and black beans in my pantry so I chose these for my salad, but any combination of beans will work. Bean salad is full of fiber, high in protein and contains tons of vitamins such as B vitamins, iron, and potassium to name a few. Beans are inexpensive and can be transformed into so many delicious dishes. Ingredients:
Vinaigrette Dressing:
Cut up your carrots and red onion. Mince garlic, measure your parsley, salt and pepper. Thoroughly rinse the beans under cold water In a large bowl add your beans, carrots, onions, parsley, and vinaigrette dressing.
Mix well, refrigerate, and serve.
