Warm up some olive oil in a skillet and sauté on medium heat the onion until translucent. Add the garlic and rice. Cook for a 3-5 minutes or until you start seeing the rice turn slightly brown. You"ll smell the nuttyness of the rice bloom. Now add your chicken stock salt and spices and mix well. Now add in the roasted red peppers Now add the diced tomatoes and kidney beans Bring up to a boil then down to a simmer and cover. Cook for about 25 minutes or until all the liquid is absorbed. Serve along any dish or add grilled shrimp, chicken or sausage like paella!
