These roasted brussels sprouts with caramelized onions and crispy pancetta are the perfect side to any meal or great on their own. If you are not a fan of pancetta or onions leave them out! Roasted brussels sprouts alone are delicious! Ingredients:
Slice the brussels sprouts in half, vertically from top to bottom and cut off the sprout stem. Discard outer leaves that look brown, but keep the others that fall off for a crispy chip! Drizzle and coat the brussels sprouts liberally with olive oil. Sprinkle salt, pepper, and the Herbs de Provence over the sprouts and mix until all are covered evenly. Cook the sprouts in a 400 degree pre-heated oven for 20-25 minutes until brown and slightly crispy. While the sprouts roast, slice up an onion into long strips.
Sauté in a pan with olive oil until onions caramelize. Set onions aside in a bowl. In the same pan add in the pancetta and cook until crispy. Combine the onions, pancetta, brussels sprouts and serve. Enjoy!
