A great way to lighten up mashed potatoes especially if it's a hot summer, are my Lemony Mashed Garlic Potatoes! Similar to a mash potato but more rustic and not weighed down with all that butter and milk that a traditional mash has. Ingredients:

Fill a medium pot with cold. Add salt, garlic and the potatoes and bring to boil. Boil until fork tender, around 25 minutes. Once potatoes and garlic are cooked, drain all the water out and add to a mixing bowl. Take your potato masher or flat spatula and rustically mash potatoes. Should be chunky. Now add in the zest of the lemon and it's juice, olive oil and parsley. Salt and pepper to taste. Add more olive oil it mixture seems dry, should have a lemony creamy texture.
