A great side dish for anytime of the year that I love to make are my Herb Roasted Potatoes. These potatoes are a wonderful side to any main course. The delicious herbs and squeeze of lemon make these potatoes explode with flavor. They are easy to prepare, great hot or room temperature. Serve them with an elegant dinner, summer bbq or picnic in the park! Everyone will love them. They wont't last long! Ingredients:
After one side is cooked golden brown turn to the other side to brown Cut potatoes into quarters. Finely chop parsly, basil and oregano. In a large zip lock bag add your potatoes, chopped herbs, salt, pepper, garlic and olive oil and message the bag until all potatoes are evenly coated. Let marinate in the refrigerator for an hour or even over night. Pre heat oven or toaster oven to 425. Place marinated potatoes on a cooking sheet and bake until both sides are golden brown and and fork tender. This should take 30-40 minutes. If you want to get it a bit crispier, I switch the oven to broil for the last 10 minutes. KEEP AN EYE ON IT! You don't want to burn them!
Finish with a squeeze of lemon all over potatoes. Serve!
