Guacamole is a delicious dip for chips, in a fajita, on a taco or a topping for a burger to name a few! Ingredients:
Picking an Avocado Avocado should have some give to it when you gently press on it. Not too hard and not too soft. A trick I recently learned while watching a Mexican chef cook was to look at the little round stem on top of the avocado. If you remove the stem rather easily and you see a nice bright green color, it is ripe and ready to use. If the stem falls of too easily or not on at all and the inside looks dark brown then it is over ripe. Preparation: Cut the avocado in half and remove the pit. With your knife, carefully cut down and across making a grid. Then scoop out into a bowl. Immediately squeeze lemon over the avocado to keep it from turning brown. Add in all the other ingredients and mix well to the consistency you like.
