Polenta is basically the fancy name for corn meal. It's a very quick cooking grain that makes a great base to be creative with. My Baby Bella Mushroom Polenta is prepared on the light side but packs a flavor punch with Baby Bella mushrooms and parmesan cheese. It takes no time to make but will seem like you slaved over the stove for hours! Ingredients:
slice and dice up your mushrooms. Sauté your mushrooms with a few tbsp of canola or olive oil. Once they they are nicely browned add salt and pepper, take off the heat and set aside. Bring 3 cups of low sodium broth to a boil. Slowly start pouring in the corn meal and keep whisking until all the corn meal is in, whisking until smooth. Lower the heat and add the parmesan. Mix well, turn off heat and add in the mushrooms. Serve immediately.
