I can't take all the credit for this dish because my daughter came up with this one! She loves to cook as well and has a great pallet and great ideas that always turn out to be delicious! This dish is light and easy, great for any meal, any time of the year and we cooked it together! Ingredients:
Bring your water to a boil and salt well (should taste salty). Now add your penne and cook until al dente. Drain pasta leaving about 1/3 cup of that water to the side. Prepare your veggies and heat up your sauté pan with a few tbsp. of olive oil. On medium heat first add the shallots and sauté for a few minutes then add your kale, carrots and cook that down for a few a few minutes. Lastly, add your cherry tomatoes. Salt and pepper to taste. Lower the heat add the pasta and some of the pasta water back into the pan with the veggies. Drizzle some more olive oil over the dish and mix well. Taste for salt and pepper and put into a large bowl. Now add the parmesan and pecorino or Romano cheese mix again and serve. It's great hot, room temperature of cold.
