Kasha Varnishkes is a classic Jewish dish made simply with Kasha (i.e. buckwheat) mushrooms, onions and bow tie noodles. It's comfort food at it's best! Ingredients:

Poor the mixed egg into the dry Kasha and mix around with a fork until egg is fully absorbed. On a pre-heated dry skillet on medium heat, add in the Kasha and cook until the grains are dry and separated. Use a fork to do this. Once done set aside. In a small stock pot bring the chicken stock to a boil then set aside. On a small heated skillet with olive oil, sauté the onions until lightly browned. Salt & pepper to taste and set aside. In the same pan add a bit more oil and sauté the mushrooms until softened. Salt & pepper to finish. Now add the mushrooms & onions back to the toasted Kasha and mix all together. Add in the hot chicken stock, cover and simmer until all the liquid is absorbed. In well salted boiling water add the entire 12oz box of pasta. Cook until slightly al dante. Strain the pasta. In a large bowl combine the pasta and kasha mixture. Stir until all is well mixed. Taste to see if you need to add salt & pepper. Then drizzle with some olive oil and serve.
