Summer has been hot and my basil plant is growing like a weed! So I whipped up some fresh basil pesto in minutes and made my Basil Pesto Orzo. It's quick, easy to prepare. Great hot or cold or as a main dish or a side to almost anything. Ingredients:
In salty water cook orzo for about 7 minutes or until slightly al dente (i.e a slight chew to it pasta). Drain pasta but remember to put a cup of pasta water to the side. Transfer to a large bowl. Add your your pesto sauce (homemade or store bought is fine as well). For this much pasta you will probably use the entire jar of pesto, 13oz. Add the Parmesan and Romano cheese. Salt and pepper to taste. Lastly, add the chopped tomatoes. Give it a good mix. Taste to see if you need more pepper or salt. Tip: if it seems bland, instead of extra salt add some extra cheese! Now transfer to a pretty serving bowl and serve! Great hot, room temperature or cold!
