If you have never had Potato Kugel you are missing out!! Potato kugel is a Jewish traditional dish served during multiple Jewish holidays. Even Hanukkah has a similar version called Potato Pancakes but they all have the same simple yet delicious ingredients. Basically it's flavored like a hash brown without the peppers. Ingredients: About 8-10 Yukon Gold potatoes peeled and shredded in a food processor 2 medium onions peeled and shredded in food processor 5 eggs 2 cloves of garlic grated 1/3 cup vegetable oil (or oil of your choice 2 tsp of Kosher salt 1 tsp fresh ground pepper 2 to 3 tbsp of all purpose flour Tools: Food processor ( you can grate but it will take way longer!!!) 9 x 13 (or close to that) stainless steel or glass baking pan (picture below) Large mixing bowl Large mixing spoon Take peeled potatoes and shred in the food processor along with your peeled onions. In a large mixing bowl, whip up the eggs, mix in oil, salt, pepper, garlic and flour and now mix in the shredded potatoes and onions. DON'T MISS THIS STEP! COAT YOUR PAN WITH OIL INCLUDING THE SIDES AND HEAT IT UP FOR ABOUT 5 MINUTES SO THAT IT'S NICE AND HOT!! THIS WILL MAKE FOR A CRUNCHY BOTTOM! Pre-heat oven on bake to 350 degrees. Pour mixture into pan and even out the top. Place into the oven uncovered for about 1 1/2 - 2 hours or until golden brown. When done, let cool for about 10 minutes then cut into nice size squares and serve!
