Like my other shrimp dishes, Pesto Shrimp is just another easy and delicious twist. It will turn your ordinary shrimp dish into an extraordinary meal! The simple addition of pesto will elevate the flavors to another level. Your guest will think you hired a professional chef! Ingredients:
In a bowl add thoroughly cleaned shrimp (deveined both sides) drizzle a good amount of olive oil and season to taste with salt, pepper, garlic and dried parsley. You can either cook right away or refrigerate until ready to cook. Pre-heat your pan on medium heat. Place your shrimp down giving them space so they grill and don't steam. Let them cook without moving them for about 4 minutes per side until. When both sides are nice and crisp take off the pan. Put your shrimp around the rice, sprinkle with lemon and add a dollop of pesto on each shrimp.
