Since were all home during this Covid-19 pandemic there is plenty of time for me and once in a while my family to cook as well. I can't take any credit for this one, but it's so mouth watering that I had to post my Mark's Baked Calm's Oreganato. It takes about 45 minutes from start to finish but oh so worth it!! Ingredients: Little Neck Clams (buy 8 per person) 3 garlic cloves finely chopped Olive oil Italian bread crumbs Dried parsley Dried oregano Clam juice saved from when you microwaved clams to slightly open 2 large lemons 1 baguette for soaking up the yummy sauce Tools: Large bowl of cold water (for cleaning clams). Medium to large bowl for microwave. 1 Sheet pan or glass/pyrex tray. Butter knife and a shucking glove or kitchen towel so as not to cut your hand when opening clam and scraping meat loose. Tips: Foil your pan/tray so that it covers all sides. This will keep all the juices in for dunking and easy clean up! Steps:
Place all the clams into a large bowl of cold water and soak for five minutes. Brush away any debris from the outside of clam. In a bowl put all or part of clams in and microwave for 40 seconds so that the clams slightly open and meat loosens. SAVE THE JUICE FROM THE CLAMS AND SET ASIDE! Now CAREFULLY with a kitchen towel or shucking glove pry open the clam with a dull knife(butter knife will do). Discard top shell. Loosen the clam meat with the knife while keeping it in that half of shell and put on the tray. Continue to do this with all the clams. Drizzle each clam with 1/2 tsp of clam juice you set aside. Add a pinch of garlic (or as much as you like) to each clam. Drizzle 1/2 tsp of olive oil on each clam. Sprinkle 1/2 tsp of Italian bread crumbs over each clam. Another drizzle of olive oil over bread crumbs to get that golden brown top. Sprinkle with the dried parsley & oregano. Place clams in a pre-heated 400 degree oven for about 10-15 minutes or until clams are golden brown. Now finish with a good squeeze of lemon all over clams and serve! Have a nice baguette for dunking and soaking up all the yummy garlic, lemon and clam sauce!
