Another mouth watering and tasty egg dish is my Zucchini and Onion Frittata. Just as simple to make as my Veggie Frittata but less to chop up!. Zucchini and onion make a light and figure friendly meal for any time of the day. Ingredients:

Finely chop up the onions and dice up the zucchini. In a hot skillet sauté up onions in a few tablespoons of canola oil until lightly browned. Salt and pepper to taste. Then add in the zucchini, cook until caramelized. Scramble up the eggs, milk, salt and pepper to taste, then pour into the same skillet with the onions and zucchini. Cook on a medium heat until the sides firm up. Place the skillet into a pre-heated 400 degree oven to finish off the top. Enjoy!
