I love making frittatas because they are a vessel for almost anything. You can pretty much add any vegetable, cheese or meat to a frittata. It makes a great meal anytime of the day. Ingredients:

Chop up your onion, pepper and spinach. In a bowl whisk up your eggs, parsley, salt and pepper and set aside. Heat up canola oil on medium heat and add your onions and peppers. Salt and pepper to taste and sauté until softened. Once your onions and peppers are cooked down add the chopped baby spinach and sauté until lightly wilted. Add your whipped eggs into the pan with the sautéd vegetables. Cover and cook for about 3-4 minutes until you see the sides starting to set up. In the meantime, pre-heat your oven or toaster oven to 400 degrees. Take off the cover and cook for about another 5 minutes until the top and center are set. Serve as soon as it comes out of oven with your favorite bread, side of arugula salad or fresh fruit.
