Usually around Passover is when my Matzah Brei Frittata perfumes the house. It's pretty simple, delicious and great for anytime of the year. If you like it sweet add some maple syrup or jam or savory just as it is! Ingredients: 8 eggs (serves 4) 1/4 cup of fat free milk ( or any milk you prefer) Salt and Pepper to taste. ( I would put 1 tsp. of salt and 1/8 tsp. of pepper) 1 sheet of matzah broken up into small pieces 1 tbsp. of butter or canola oil Topping: Maple Syrup Jam Just as is! In a large bowl mix up the eggs, milk, salt and pepper. Then break up the matzah into small pieces and add the the egg mixture. Let sit for about 8-10 minutes until the matzah has had a chance to soften and absorb the milk. Then add to a pre-heated skillet on medium heat and let the bottom cook until you see sides firm up. This should take about 5-8 minutes. Now cover and continue to cook for another 4-5 minutes until the center is solid. Cut serve immediately.
