A great protein packed breakfast, brunch, lunch or dinner is my quick and delicious Cottage Cheese Omelette. It's creamy, savory and full of flavor! Ingredients: 2-3 Large eggs or Egg whites (3-4) Salt and pepper to taste Low fat or fat free cottage cheese A small slab of unsalted butter or non stick spray Tools: Non stick or iron skillet spatula Very simply whip up your eggs, salt and pepper so they get frothy and airy. Pour your egg mixture onto a per-heated pan which you buttered or sprayed. On medium to low heat, let the eggs cook while pushing back the cooked part with a spatula letting the uncooked part roll onto the pan. When almost cooked add 3-4 generous tablespoons of cottage cheese down the center of the omelette. Then fold over each side and let it go another minute. Serve with a sprinkle of dried parsley on top.
