I recently added my Versatile Chimichurri Sauce to my blog and said how many amazing dishes you can make using this sauce. Today, I decided to make a chimichurri frittata. It's a great way to add some zest to your eggs with this simple addition. Ingredients:

In a bowl mix up your eggs, salt and pepper. Add the chimichurri sauce and mix well. Heat skillet on medium heat and add butter. Once melted add the egg mixture. Let it cook for about 5 minutes until you see the rim of the eggs getting solid and pulling away from the pan. Once 3/4 of the way done put the skillet in the oven under the broiler for another 3-5 minutes or until the center is solid. Keep a close eye on this part so as not to burn the frittata and over cook it. Take out of the oven and serve immediately.
