If you think this is just a healthy unappetizing version of a hash brown, then you need to make this! This is the most delicious and YES, healthy version of a hash brown and you won't even miss the potato. Put a sunny side up egg on it and the flavors will explode in your mouth! Forget about the guilt, there won't be any! Ingredients: 1/2 of a large head of cauliflower riced in a food processor or grated 1 egg 1 tsp. of salt 1/8 tsp. of white pepper (black pepper will do as well) 1/8 tsp. of Hungarian Paprika 1 small onion chopped finely 1 to 1 -1/2 tbsp. of unsalted butter (to sauté onions Tools: 1 medium iron skillet or a pan that can go from stove top to oven Food processor or grater Cut a head of cauliflower in half and rice it in either a food processor or using a grater. In a bowl, whip up an egg add your salt, pepper, garlic and paprika and mix in the riced cauliflower. Set aside. To a hot skillet add your butter and onions. Sauté until lightly caramelized. Now add your cauliflower mixture into the pan with the onions and give it a good mix. Now flatten it out evenly and let it cook on medium heat until you see the sides browning up. While this happening put your oven on broil. Put your pan into the oven on the top rack and boil until the top gets golden brown. This should take about 5 minutes. Don't walk away from your oven and keep an eye on it! You can eat it just like this or make it extra special by adding a sunny side up egg on it!
